88cakes Marmalade Fruit Cake |
Joanna Cross
Ingredients: Soft margarine, soft brown sugar, mixed dried fruit, eggs, self-raising flour, glace cherries, chunky marmalade.
My mum was an enthusiastic cake maker and my cake is made in a Kenwood Mixer that my dad treated her to at the Bath and West Show circa.1960. I continue to use it. This is the very last of a solid repertoire of cakes; the recipe for this marmalade fruit cake was cribbed from my aunt. It is very easy to make and my dad enjoyed eating it with his tea in their later years. They loved each other very much. My aunt succumbed to Alzheimer's disease and my mother to vascular dementia but their recollections of cake-making prowess remained constant.
