Ingredients: 125g margarine, 100g dark chocolate, 300g marmalade, 150g caster sugar, pinch salt, 2 large eggs, 150g self-raising flour.
This cake is easy to make (all done in a saucepan), easy to transport (it’s a solid cake so won’t fall apart if you are taking it somewhere) and though it doesn’t look like much, most people agree it tastes good! Who doesn’t like the combination of chocolate and orange?! My kids love this too, but it’s almost too nice for them sometimes. It’s great for kids’ parties when you want to take a cake for the adults but you need to get to the venue in one piece! This version is dairy free but I also make it with gluten free flour and it works well too. It’s also good as a pudding cake, still warm from the oven. One recipe; many uses. That appeals to me as an often disorganised Mum of three.
